6: Pimento Sausage Dip
Darryl Mickler, Senior VP of Food & Beverage Golden Corral Corporation
Another starter dish from Mickler, this riff on pimento cheese dish features Tyson® Pork Italian Sausage Crumbles. “Sausage is a great fit with peppers, which is the main component of pimento. The sweetness of peppers always blends well with the spiciness and herby notes of sausage,” he explains. The sausage crumbles are combined with a trio of cheeses—pimento, cheddar and cream—plus chunky salsa and then placed in a skillet and baked until the cheese is fully melted and slightly brown. At service, it’s topped with more cheddar, Parmesan and slices of green onions.
