A simple yet craveable Italian street food, coccoli are fried dough balls, typically served with prosciutto and stracchino cheese. Inspired by his time studying abroad in Florence, Chef Brian Brindza puts an elevated twist on the dish with BelGioioso® Crescenza-Stracchino™, fresh basil pesto, prosciutto and truffle honey. “I think coccoli can be so much more than what you find in Italy,” he says. “They are so rooted in tradition there that they sometimes don’t realize the opportunities.” In addition to these signature flourishes, he suggests other riffs, such as fresh thyme, pomodoro sauce, Maldon salt and even gelato.
