Broken Yolk Café, a multi-unit breakfast-brunch-lunch concept, has a clear winner in its Spicy Vegan Bowl. “This dish is a crowd-pleaser because you don’t have to be a vegan or vegetarian to enjoy it. It was an immediate hit, loved by all, and it remains one of our most popular fan favorites,” says Maria Gelastopoulos, director of culinary and menu development.

The build starts with plant-based eggs that are scrambled with fresh spinach, mushrooms, onion and bell peppers. That assembly is served atop seasoned home fries and then crowned with slices of avocado and a plant-based spicy sausage. A Sriracha drizzle provides a final hit of heat. “The fresh components, paired with the bold flavors of the plant-based eggs and sausage, offer a zesty and flavorful twist on a breakfast bowl,” says Gelastopoulos, noting that the plant-based sausage, which delivers a distinctive kick, is the key to elevating the flavor. “Paired with the fresh sautéed veggies, it creates a vibrant blend of flavors—fresh with just the right amount of heat.”
