A keen balance of sweet heat makes the Citrus-Habanero Mahi Sandwich a menu standout at Moxies, a premium casual concept known for its handcrafted, modern menu. Brandon Thordarson, director of culinary and beverage and brand executive chef, describes this recent menu addition as a “new guest favorite.”

“It’s a mahi-mahi fillet that gets a citrus-habanero spice blend rubbed onto it right before it goes on the grill,” says Thordarson. “After being grilled, it is stacked on a brioche bun and topped with a fresh salad of cucumber, iceberg lettuce, mango and fresh herbs. We use a housemade aïoli on the top and bottom bun. You get a nice balance of texture, spice, acidity and sweetness—a full explosion of flavors!”

Mango plays a critical role in balancing the high heat of the habanero. “Finding the perfect balance of sweet and spicy was key in developing this flavor profile,” says Thordarson. “Initially, the sandwich lacked mango, but through extensive testing, we discovered that its natural sweetness was essential in harmonizing the bold heat and acidity. The result is a perfectly layered bite where the sweetness of the mango enhances and rounds out the spice, creating a truly craveable experience.”
