French Onion’s Big Burger Moves
Félix Cocktails et Cuisine brings traditional flavor to its Raclette Burger
Félix Landrum may have been inspired by his grandmother’s recipe for French onion soup, but his modern take, the Raclette Burger, breaks with tradition in a few key ways. The chef and owner behind Félix Cocktails et Cuisine ramps up French onion’s signature indulgence by reimagining it as a burger, and not just any burger. Short ribs are ground into two patties and layered with raclette cheese, caramelized onions from Soupe à l’Oignon (also on the menu) and a touch of dijonnaise. The condiment introduces a new flavor into the mix while also serving as a bridge between classic burger and soup profiles.
As for using raclette in place of the typical Gruyère, Landrum was initially unsure of how guests would take to the former’s “funky” taste but found the sweetness of the onions and the tang of the dijonnaise balance the overall profile.
