Putting a fresher spin on all the fresh spins on the ubiquitous margarita can be a challenge. While the beverage menu at modern Mexican restaurant Lona comprises several margarita variations, arguably none are as bold as the Mercado Margarita. Jalapeño-infused blanco tequila is blended with passionfruit, lemon and lime juices for a flavor profile that packs sweet heat and an ombré presentation that draws the eye. It’s crowned with a foam made from hibiscus and rosemary that will “blow your mind,” says Riesler Morales, head of mixology at parent company Richard Sandoval Hospitality. “The combination of all the ingredients transports you to different latitudes.”
The cocktail’s modern Latin sensibility makes it a perfect fit with Lona’s brand, which emphasizes fusing Mexico’s diverse culinary heritage with a spirit of innovation. The care that goes into its execution is another factor in its success. Techniques include infusing spirits, creating a precise foam and dehydrating oranges for a garnish. The result is an international libation that “represents innovation, passion and folklore,” says Morales.
