Success starts by capitalizing on the popularity of barbecue burnt ends, which are, of course, a specific cut off a brisket. Here, however, hand-cut turkey breast is the hero swap. The turkey breast is marinated in black pepper, salt, brown sugar and soy sauce. After a quick sear to lock in flavor, the meat is smoked for hours over hickory wood, then finished in a sous-vide bath to maintain tenderness. “Turkey breast can be dry, but by finishing sous vide, we maintain juiciness and tenderness,” says Brinn Shipley, who goes by “the food guy” at Clean Eatz.
