The dessert menu at Rumi’s Kitchen highlights the vibrant flavors of the Middle East in classic formats, from cardamom custard in the Pot de Crème to pine nuts in Rumi’s Tart, served with cinnamon ice cream. The Persian Ice Cream Sandwich boasts a flavorful trifecta of traditional ingredients in a more playful format: saffron, rosewater and pistachio. These three ingredients are certainly having a moment on today’s menus, bringing global flavor intrigue to the plate.
To build the dessert, housemade vanilla ice cream is infused with that trio, giving it floral, earthy and nutty tones. Saffron leads the pack on color impact, imparting a delightfully warm, golden hue to the ice cream. It’s then sandwiched between two Oblatne-style wafers, characterized by their thin, textured surface.
“For this dessert sandwich, we use the best pistachios we can find, the best quality saffron money can buy and the perfect proportion of rosewater. That’s what makes you want to keep eating it,” says Ali Mesghali, chef/owner of this modern Middle Eastern concept. “This has been one of our top-selling desserts since the day we opened.”
