Long a menu fixture at bistros, French onion soup is enjoying new popularity in fresh translations, such as the Raclette Burger at Félix Cocktails et Cuisine. “The dish is a tribute to my French heritage and my grandmother’s recipe for Soupe à l’Oignon, which is also on the menu,” says Félix Landrum, owner of the Parisian-inspired concept. “The profile is both comforting and sophisticated—much like the beloved soup that inspired it.”
The build starts with two short rib-brisket blended patties that are layered with caramelized onions from the restaurant’s French Onion Soup, plus raclette cheese and a finish of Dijonnaise. It’s all nestled in a fresh, locally baked sesame bun. “I was initially concerned that the raclette might be intimidating for some guests,” says Landrum. “Its funky taste isn’t necessarily something everyone is familiar with. However, with the caramelized onions and Dijonnaise, it’s perfectly balanced. Like much of our menu, it offers a unique twist on traditional French flavors. It’s one of our best sellers.”
